Low intervention
Nothing added, almost nothing taken away
Wild ferment, no fining, minimal sulphur at bottling. Some of it is cloudy and one or two will fizz slightly, and both of those are on purpose.
Weighed, not bagged
Everything is sold loose from the tin, from ten grams upward. It costs less, it keeps better, and you can smell it before you commit to a hundred grams of it.
Brewing guides are printed on the back of every label, in actual grams and seconds.
Eleven rooms
No two rooms are the same shape
It was a merchant's house before it was a hotel, so the floors slope and the ceilings vary. Every room is photographed as it actually is, from the doorway.
Refill, do not replace
A pen worth keeping for thirty years
We stock refills for every pen we sell, including the ones discontinued before we opened. If a nib needs regrinding it goes to a bench in Birmingham and comes back in a fortnight.
Serviced here, not sent away
Movements are stripped, cleaned and regulated on the bench upstairs. Nothing leaves the building, so nothing gets lost between here and a service centre.
