The counter
Dry-aged beef
Thirty-five days minimum in the cabinet you can see from the counter. Ask and we will cut the steak in front of you.

Whole animal
We take two pigs and half a steer a week and use every part. It is why the sausages change and why the mince is good.

Ready for the oven
Rolled, tied, rubbed and labelled with a time and a temperature. Nothing needs anything doing to it beyond heat.

Gear by how you ride
Road
Leathers, boots and gloves rated for the motorway rather than the car park. Fitted properly, which takes about half an hour.

Commuting
Textiles you can wear into an office without changing, with armour that comes out before it goes in the wash.

First bike
The four things you actually need on day one, and the six the internet will tell you to buy that can wait a year.

Tonight
Before seven
Everything on the list is six pounds and the room is quiet enough to hear the shaker. It is the best hour of the day here.

Graded honestly, played before pricing, and every sleeve opened. If it is scratched the label says so.

The listening room
Two decks, a decent amp and a door that shuts. Book an hour and bring whatever you are thinking of buying.

Two hours to yourself
The heat
Eighty degrees, wood fired, and a bucket you pour yourself. Sessions run for two hours and nobody hurries you out.

Treatments
Sixty or ninety minutes with the same four therapists we have had since we opened. No packages and no upsell.

Hot stones
Basalt, heated in water rather than a cabinet, worked along the back for the first half of the session.
